Je kent vast en zeker het heerlijke Indonesische groentegerecht gadogado met pindasaus! Nou, dit is een variant erop: gadogado met tempé en cashewnotensaus. Een vegetarisch gerecht dus, en de basis is herkenbaar, met lekker veel groenten. De saus daarentegen is nét even anders dan pindasaus, echt een testje voor je smaakpapillen. Zet het woord pinda maar even uit je hoofd, zodat deze cashewnotensaus je oprechte aandacht krijgt. Mijn partner is een kritische eter en echte lekkerbek. Hij is dol op van alles, maar vooral op pinda’s en pindasaus. Ik vond het spannend hem dit alternatief voor pindasaus voor z’n neus te zetten. Maar… hij vond ‘m lekker!

Gadogado kun je op veel manieren maken. Allerlei groenten zijn er geschikt voor, dus kies gewoon wat jij lekker vindt. Sperziebonen en sugar snaps, Chinese kool en taugé zijn mijn favoriete groenten voor dit gerecht. En natuurlijk ontbreekt komkommer niet. Groene kool, bloemkool, savooiekool of witte kool passen ook allemaal goed. En probeer rauwkost uit zoals reepjes paprika, wortel of knapperige sla; lekker doen!

Als eiwitbron kies ik voor tofoe of tempé, net wat ik in huis heb of waar ik zin in heb. En een ei hoort erbij. Tot slot serveer ik er driekleurenrijst bij en pittige rijstkroepoek. Heerlijk joh!

Verras je familie of vrienden maar eens met deze heerlijke gadogado met tempé en cashewnotensaus!

Check: misschien heb je nog rijst over van de vorige dag? Dan kun je die mooi gebruiken bij deze gadogado.
Zo niet, dan kook je vooraf jouw favoriete rijst gaar.

Gadogado maken

  • Haal de puntjes van de sperziebonen en snijd ze dan doormidden.
  • Snijd de Chinese kool in fijne reepjes.
  • Stoom vervolgens de sperziebonen ca. 10 min. net niet beetgaar en leg de Chinese kool en taugé erbovenop.
  • Laat alle groenten dan nog een paar minuten  doorstomen (de sperzieboontjes moeten beetgaar zijn).
  • Kook intussen de eieren hard, spoel ze af en houd ze apart.
  • Snijd de komkommer vast in plakjes.

Tempéblokjes bakken

  • Snijd dan de ui fijn.
  • Verwarm 1 el olie in een hapjespan en fruit de ui aan.
  • Voeg de tempéblokjes toe en roerbak tot ze mooi bruin zien.
  • Zet de warmtebron dan uit en houd de tempéblokjes en ui warm.

Cashewnotensaus

  • Snijd het sjalotje en het rode pepertje fijn.
    (Verwijder de zaadjes van de rode peper als je niet van heet houdt.)
  • Verwarm de olie in een steelpannetje.
  • Fruit sjalotje en rode pepertje hierin en voeg een uitgeperste teen knoflook toe.
  • Voeg dan de cashewnotenpasta, de kokosmelk, de ketjap, ketoembar, trassi en suiker toe.
  • Roer goed en voeg zoveel water toe als nodig is voor een dikke saus.
  • Laat dit even 10 min. pruttelen.
  • Voeg zout naar smaak toe, en eventueel peper.

Schaal opmaken

  • Kies een mooie schaal uit en leg de groenten in het midden.
  • Verdeel dan de tempéblokjes er overheen en daarna de cashewnotensaus.
  • Snijd vervolgens de eieren in plakjes en leg die er samen met de komkommer bij.
  • Je kunt een deel van de kroepoek breken en in stukken bovenop de gadogado leggen.
  • Serveer de rijst en de overgebleven kroepoek erbij.
