Wilderijstsalade is een salade op basis van driekleurenrijst. In de mix zit langkorrelige rijst, rode rijst en zwarte rijst. Door de rijst, boontjes en avocado is dit een vezelrijke, voedzame salade, en ook nog een vegetarische. Een gezonde maaltijd dus.

Deze rijstsalade is net een soort nasi, maar dan met andere ingrediënten. Deze wilderijstsalade is lauwwarm op z’n lekkerst, maar je kunt hem ook koud eten.  Je kunt hem dus ook vooraf maken voor een buffet. Bonen en rijst zijn een bekende, smakelijke combinatie. Het is leuk om eens andere boontjes te kiezen, zoals deze adukiboontjes bijvoorbeeld. Je hebt hiermee een lekker vullende salade, die licht kruidig is door de koriander en lekker fris door de limoen.

Hoe maak je het?

  • Kook de rijst gaar en laat hem tot lauwwarm afkoelen.
  • Verwarm dan de boontjes en laat ze goed uitlekken.
  • Snijd de rode paprika en avocado in stukjes.
  • Snijd vervolgens de ui in dunne ringen.
  • Doe de ui met de rode wijnazijn in een kom en laat dit 10 min. staan.
  • Meng daarna de rijst, boontjes, avocado en paprika.
  • Besprenkel ze royaal met limoensap.
  • Voeg dan alles bij elkaar, samen met de koriander.
  • Tenslotte strooi je er naar smaak nog een beetje chilipoeder over.
